Adaugati peste pesmet, parmezanul, usturoiul granulat, coaja de lamaie, patrunjelul, boiaua de ardei, cimbrul si amestecati pana se omogenizeaza compozitia. Intr-un castron separat, se pune un ou si se toarna smantana deasupra. Se bate compozitia cu o furculita pana se omogenizeaza. Pregatiti fileurile, taindu-le in fasii subtiri de grosimea a doua degete. Se pune faina intr-un castron si putem incepe prepararea.<br />Preparare:<br />Se tavaleste pestele prin faina. Apoi se introduc in smantana. In final se tavalesc in pesmet si se aseaza bucatile de peste pe o farfurie.<br />Luati o tigaie in care puneti ulei, dupa care lasati-l la incins, la foc mediu. Puneti bucatile de peste la prajit si lasati-le pana capata o culoare maro-auriu. Dupa ce s-au rumenit, scoateti bucatile de peste pe o hartie de bucatarie, sa se scurga surplusul de ulei. Apoi se fac chiftelute, se dau prin faina si se prajesc pe toate partile in grasime incinsa. Chiftelutele prajite se pun intr-o cratita, se adauga bulion de rosii, 1 pahar de supa de carne, 1-2 foi de dafin, 5-6 boabe de piper(sau o bucatica de ardei iute). Cratita se acopera cu capac si se lasa sa fiarba inabusit, la foc mic, 10-20 minute. Se bat bine cu furculiţa, ca să se adune pieliţele, care se vor îndepărta, şi ca să se formeze un lichid vâscos prin spargerea unor boabe de icre. Numai în acel moment începe adăugarea uleiului, ca la maioneză. E preferabil să nu se pună nici gris, nici miez de pâine, ca să nu le denatureze gustul. Se bat continuu cu furculiţa sau cu mixerul, turnând câte puţin ulei. Puteti adauga si suc de lamaie daca doriti.<br />Opriti focul si turnati toti crevetii in apa.<br />Lasati sa se inmoaie 3-5 minute sau pana ce sunt gata. Crevetii sunt foarte buni atunci cand sunt gatiti usor.<br />Verificati taind unul in jumatate. Taiati si caliti ceapa, adaugati un ardei gras taiat fasii, ketchup si ulei. Se inabusa 6 min, se ia tigaia de pe foc, se adauga verdeata, usturoiul pisat, sarea si piperul.<br />Turnati umplutura peste blat, intindeti uniform dupa care adaugati bucatile de ton, maslinele si cascavalul.
